Matcha Made in Heaven

So unfortunately, my Disney World vacation was cancelled due to the snowstorm so I was snowed in at home with nothing to do so I decided to do my favorite thing which was bake & blog 🙂 My cousin bought me really great quality matcha powder from San Fran so I decided to finally test it out. The higher the grade of the matcha, the better the quality, which will give you a nice green color. If you didn’t know, matcha is basically green tea powder that has been finely grounded and has a lot of nutritional value! This makes me feel better about eating baked goods with matcha in it since it’s healthy LOL

Matcha Cupcakes – yields 12 

Cupcake Ingredients

  • 1 cup flour (you can use white, whole wheat, or whatever you like but with my experience, you’ll get a nicer green color using white flour than whole wheat flour. If you whole wheat, simply add green food coloring to get desired color)
  • 1/2 cup brown sugar
  • 1/2 cup almond milk (or any milk you like)
  • 1 large egg
  • 6 tablespoon matcha powder
  • 4 tablespoon room temperature butter
  • 1 pinch of salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder

Cupcake Directions

  1. Preheat oven to 350 degrees F
  2. In a mixing bowl, swift the dry ingredients together.
  3. In another mixing bowl, mix together sugar and butter until smooth. Mix in egg and then add dry ingredients together. Start with low speed and gradually go up to medium high speed.
  4. Add in milk gradually and mix on medium speed.
  5. Divide evenly amongst 12 cupcake liners – fill 2/3 of cup.
  6. Bake for 18 mins.
  7. Let cool in cupcake pan for 2-3 minutes and then put on cooling racks to cool while preparing frosting.

Frosting Ingredients

  • 3 cups powdered sugar
  • 1 cup softened butter
  • 2 tablespoon matcha powder
  • 2 tablespoon milk

Frosting Directions

  1. With an electric mixer, mix butter for 5 minutes or until fluffy at low-medium speed.
  2. Add in 1 cup of powdered sugar at a time.
  3. Add in milk + matcha seasoning.
  4. Mix until fluffy.
  5. Frost cupcakes with spoon or pipette bag + your favorite Wilton tip. Make sure cupcakes are completely cool before frosting.
  6. Garnish matcha powder on top of frosting and whatever toppings you like.

Matcha Chocolate Chip Cookies – yields 24

Ingredients

  • 2 cups flour (you can use white, whole wheat, or whatever you like but with my experience, you’ll get a nicer green color using white flour than whole wheat flour. If you whole wheat, simply add green food coloring to get desired color)
  • 1 cup light brown sugar
  • 1/2 cup white sugar
  • 3/4 cup melted butter – let cool after microwaving before using
  • 1/2 teaspoon baking soda
  • 2 tablespoon matcha powder
  • 1 tablespoon pure vanilla extract (do not use imitation!!!)
  • Pinch of salt
  • 1 egg + 1 egg yolk
  • 2 cups chocolate chips (I put 1.5 cups in the batter and then use the other 1/2 cup to decorate on top)

Directions

  1. In a mixing bowl, sift all dry ingredients together.
  2. In another mixing bowl, mix the sugars and butter together on medium speed until mixed.
  3. Add eggs and vanilla extract. Mix until blended.
  4. Refrigerate dough for an hour before using. This makes the dough easier to work with and it’s not all messy.
  5. Wait an hour then preheat oven to 325 degrees F.
  6. Put parchment paper on 2 cookie sheets and spray with nonstick baking spray.
  7. Using a tablespoon, scoop dough and spread evenly on cookie sheet.
  8. Bake for 12 mins. Remove and let cool on cookie sheet for 3 mins and then remove with spatula.
  9. Pour a glass of milk and enjoy 🙂
